Roasted fish with Tahina El Rashidi El Mizan


  • 2 kilos fish, whole or boneless slices
  • 10 cloves of garlic
  • 1 green chili, minced
  • Salt, pepper, cumin
  • Lemon juice
  • 2 minced onions
  • 2 spoons oil
  • 2 cups tomato juice
  • ½ cup diced carrots
  • ½ cup green bell pepper, diced
  • ½ cup celery, minced
  • ½ cup lemon juice
  • Pinch of sugar
  • For the Tahina:
  • 1 cup Tahina El Rashidi El Mizan
  • ½ cup water
  • ¼ cup vinegar
  • 2 cloves of garlic
  • Salt, pepper and cumin


Season the fish with the garlic, salt, pepper, cumin, lemon juice, and green chili and mix well. Heat oil in a pan and add onions, carrots and bell pepper then stir well. Layer the seasoned fish in a tray and add tomato juice, lemon juice, minced celery, pinch of sugar and the water. Put the tray in the oven and roast till cooked. Sprinkle Tahina El Rashidi El Mizan on top.

For the Tahina:
In a bowl add Tahina El Rashidi El Mizan, water, vinegar, salt, pepper and cumin then mix well till combined. Sprinkle over the fish.
